I believe that most were Philippino Army or Air Force Pilots, since they were air assets of the Philippine Military. There may have been some US pilots, either civil or military involved in the actual stunts, such as when a chopper is hit and there are pyrotechnics involved.

Philippean Army. I have seen the movie on the making of the film. Copola was having issues that the army at the time was engaged in a battle of its own and would often pull the helicopters and have them return to base during filming.

Also a Typhoon had struck during filming. Some scenes during the storm were taped. These are now shown in the FULL version of the movie as it was intended and re-released as Appoclypse Now Redux.

Easily my most favorite seen from that movie. I loved watching the OH6 Loaches buzzing around when I first saw this as a kid. When I got to fly in OH6's as a Border Patrol Agent it would always make me think of this scene. The OH6's we had were actual Vietnam vets and at least one of them had bullet hole patches in it.

Here's a longer clip of that scene that has the entire assault in it.
