after watching snippets of the flight scenes in the movie (again tonight) & after seeing the entire movie millions of times, i wonder what the heck the rio's are holding on to!!! are they just plain twin handle bars that were standard in the rear cockpit on f-14's?? or some movie prop fopa??

Yes there was a handle in the back seat. Later versions, I believe, had chaff and flare dispenser buttons on them.
