I could be wrong but I don't remember The Fighter Collection having a two-seat Mustang. I can name a few here in the States that are "rent-a-ride".

Since the end of 2007 there are two P-51 registered and flying in Germany, D-FPSI “Darlin Ann“ and D-FBUN "Jay Hawk Jalopy”. Both are currently based at Bremgarten, south of the city Freiburg. Maybe one of them will be available for passenger rides. Pictures of both here:

The Scandinavian historic flight has also a Mustang available. They do some passenger flights last year during an airshow in Germany, see my video here:
