So what does one do with a functional V1 engine?

Build an airframe and launch rail for it. Hey, wouldn't a Cassutt be just about right with a little stretch aft of the cockpit? We could also put the pylons on one of the B-17s for an air launch. Volunteers for first flight?

Create an insane carbon footprint and pizzoff anyone within earshot not sharing in your amusement!

In other words...nothing practical.
