I think single engine piston would likely be for me a curtis jenny

Single engine jet = X-29 ( the forward swept wing F--5 with canards and the F-404 F-18 motor)

Multi ENgine piston aircraft, I would say would be an airworthy lancaster/dynavert

Multi Engine JET... I would say the Avro Jetliner or the Skyfox (T-33S)

I think all of these aircraft made significant contribution to aviation and few are left or maybe only one ever made and therefore are rare ...or similar to "rocking horse sugar"

Single Engine Piston: Hawker Tempest or Typhoon.
Multi Engine Piston: B-32 Dominator or Bristol Beafighter (spelling)

Single Engine Jet: F-8 Crusader or F-84 Thunderstreak
Multi Engine Jet: B-47 Stratojet or B-58 Hustler

For single engine prop........... Focke-Wulf Ta-152 H-1

Muti-engine prop................... Dornier Do-335 A-1

Multi engine prop, well, the DeHavilland Mosquito is my favourite, luckily there are at least a couple under restoration. What would be really cool is a Focke-Wulf Ta-154 Moskito, for those unfamiliar with it, http://en.wikipedia.org/wiki/Focke-Wulf_Ta_154
