It doesn't matter what program you are participating in - Timeless Voices, Rutgers, CAF, Veterans History Project - if you know a veteran or someone with an interesting story to tell, by all means sit down and do an interview with them. It can be paper and pencil, audio recording, video recording, whatever - it only takes an hour or two, and you'll have helped preserve history. There are tips for conducting an oral history interview on the Timeless Voices website, and you can find helpful info all over the web. Just do a search for "oral history".
